What you need:

A selection of julienne veggies such as butternut, aubergines, baby marrows, carrots and mushrooms.

What you do:

Fry onions and garlic in a pan with a dash of olive oil. Fry selection of veggies with the onion/garlic mix. Sprinkle with fresh herbs.

Blanche a few big spinach (Swiss Chart) leafs. Pat dry. Put veggies with a few dollops of cream cheese plus pesto on overlapping spinach leafs and wrap.

It’s delicious!!!
