Spicey Baked Cheesecake; a new recipe


What you need:

250g biscuits

1 teaspoon mixed spice

100g butter melted butter

Butter a 20 cm spring form pan.  Mix all the ingredients and press into the pan.  Place in fridge for 30 minutes until set.

500 g cream cheese softened

160 g caster sugar

4 eggs

1 teaspoon vanilla essence

1 tablespoon orange juice

1 tablespoon grated orange rind

Preheat the oven to 180 degree C.  Beat the cream cheese until smooth.  Add the sugar and beat until smooth.  Add the eggs, one at a time, beating well after each addition.  Mix in the vanilla, orange juice and orange rind.

What you do:

Pour the mixture into the crumb case and bake for 45 minutes, or until just firm.

What you need (topping):

1 cup sour cream

½ teaspoon vanilla essence

3 teaspoons orange juice

1 tablespoon caster sugar

freshly grated nutmeg

What you do:

To make the topping, combine the sour cream vanilla, orange juice and sugar in a bowl.  Spread over the hot cheesecake, sprinkle with nutmeg and return to the oven for 7 minutes.  Cool, then refrigerate until firm.
