RECIPE: CHOCOLATE CUPCAKES WITH WHITE ICING

What you need:

2 cups (280g) cake flour

5ml salt

5ml baking powder

10 ml bicarbonate of soda

60g cocoa powder

260g sugar

250ml oil

250 ml stout beer

125ml strong coffee

125ml milk

2 large eggs

5ml vanilla essence

Icing

115g butter

280g icing sugar

90 ml Baileys Strawberry liquor

What you do:

yum eat cafe recipe cup cakesHeat oven to 180 degrees C and line a cupcake pan (24 spaces) with paper cups.

Put all the dry ingredients into an electric mixer.  Add oil, beer, coffee and milk and mix for 2 minutes at medium speed.  Add eggs and vanilla and mix for another 2 minutes.

Pour mixture into paper cups about 2/3 full.  Bake for 17 – 20 minutes.  Cool down for 5 minutes and take out of pan.

Cream butter with an electric mixer.  Add half of the icing sugar and mix well.  Add the liquor and rest of icing sugar and mix well.  Ice the cupcake.
