@YumEatCafe Quiche recipe. A bit of YUM in India.
Let’s start with the underground: the shortcrust pastry.
Ingredients: 375 ml flour, 1 ml salt, 125 gr ice cold butter in cubes, 1 egg yolk (beaten), 5 ml lemon juice and 20 ml ice water.
Put flour, butter cubes and salt in food processor. Use ‘pulse action’ until the mix looks like breadcrumbs.
Mix egg yolk, lemon juice and ice water and add to the flour mixture in the food processor. Pulse until it binds.
Turn it out on lightly floured surface and roll into a ball. Cover the ball with clingfilm and put it in fridge for at least one hour. Roll out and line in quiche pan.
The Filling: Fry bacon until crisp and onions until translucent.
For the egg custard you need 250 ml milk, 125 ml cream, 3 extra large eggs, a few pinches of salt and black pepper (to taste). Mix this together.
Put bacon and onion mix into base. fill up with egg custard and sprinkle with grated cheese and parsley. Bake in oven (180 C pre-heated) for 25 minutes or until set.
NOTE: To your own liking add other ingredients to the filling such as butternut, broccoli, tomatoes, green beans, carrots and cauliflower (etc.)
